Avocado Breakfast Pita Pizza
I found this recipe. I made it for my mom and I, but I tried two slightly different methods. The recipe says to spread the avocado then add the spices and such.. I tried that, then I tried adding all of the spices, olive oil and lemon juice together then spreading it on the pita after it cooled a little and topping it with proscuitto (cooked slightly in the skillet), feta, and an over-easy egg. I also used two different types of pita bread, just personal preferences.
This may be one of my favorite breakfasts!
Next, Mini Quiches
I've seen many recipes for these little babies but I ran across this one this morning and decided to just make 'em! She calls them Egg White Muffins. I used liquid egg whites for half and liquid egg substitute for the other half. I just chopped up some veggies, spinach, tomatoes, red onion, green peppers, and mushrooms and added them to the egg product in a muffin pan. I topped them with Mrs. Dash seasoning, pepper, and cheese! Baked them for about 15 min at 350 degrees.
These are so easy to custom make if you're making them for more than just yourself, kind of like an omelet bar. The only thing I'd do different next time is mix in some pepper and maybe a little salt with the egg product before pouring it into the pan and adding the ingredients.
Lastly, I'd like to share a smoothie recipe. This comes from one of my sorority sister's blog, who inspired me to start blogging in the first place. I've been making this smoothie for my dad for the past few days. He does not know what is in it, because if he did, he'd flip, but he loves it! "This is some good stuff" was his description this morning!
