Recipes to Share

I have come across a few recipes recently that I'd like to share with you guys. I normally do not like to follow recipes when it comes to cooking because, well, recipes get complicated. But these are easy to follow but also easy to make your own. 
Avocado Breakfast Pita Pizza
I found this recipe. I made it for my mom and I, but I tried two slightly different methods. The recipe says to spread the avocado then add the spices and such.. I tried that, then I tried adding all of the spices, olive oil and lemon juice together then spreading it on the pita after it cooled a little and topping it with proscuitto (cooked slightly in the skillet), feta, and an over-easy egg. I also used two different types of pita bread, just personal preferences. 
This may be one of my favorite breakfasts!


Next, Mini Quiches
I've seen many recipes for these little babies but I ran across this one this morning and decided to just make 'em! She calls them Egg White Muffins. I used liquid egg whites for half and liquid egg substitute for the other half. I just chopped up some veggies, spinach, tomatoes, red onion, green peppers, and mushrooms and added them to the egg product in a muffin pan. I topped them with Mrs. Dash seasoning, pepper, and cheese! Baked them for about 15 min at 350 degrees. 
These are so easy to custom make if you're making them for more than just yourself, kind of like an omelet bar. The only thing I'd do different next time is mix in some pepper and maybe a little salt with the egg product before pouring it into the pan and adding the ingredients.

Lastly, I'd like to share a smoothie recipe. This comes from one of my sorority sister's blog, who inspired me to start blogging in the first place. I've been making this smoothie for my dad for the past few days. He does not know what is in it, because if he did, he'd flip, but he loves it! "This is some good stuff" was his description this morning!

Blueberry and Corn Salad

So my neighbors picked a ton of blueberries and brought us over a large bucket. I love blueberries but was running out ways to eat them and was looking for something new.. In my search I found this recipe from bhg.com and since I had most of the ingredients at home already I figured it would be perfect! I altered it a little! 
Corn and Blueberry Salad 
I used all of the ingredients the recipe calls for except the jalapeƱo and the honey. I added lettuce as a base plus avocado and left over grilled chicken. Since I just made the salad for myself. I just drizzle the dressing ingredients over top of the salad and mix it all together when I'm about to eat it. I was nervous about the blueberry with all of the other ingredients in the salad. But it was absolutely delicious. I ate it again for lunch the next day!

Weekday Meals

I work early in the morning so it's easiest for me to prepare everything the night before so I can get up in the morning, run, shower and go.
This week was a little off because of the holiday but here are a few meals:


Quick Chicken and Spinach Salad for Lunch and Dinner

Normally, I come straight home from work and pull out a million things from the fridge and go from there. I take out a plastic container to pack lunch and a plate for dinner. Then depending on what I'm in the mood for I'll just start adding ingredients to both. This particular time I felt like eating the same thing for both meals but I usually try to switch up ingredients for variety... 
Here I used spinach, avocado, mushrooms, carrots and added some leftover grilled chicken. Topped with a little black pepper, olive oil and lemon juice (notice the dressing container attached to the plastic lid, best invention ever!). On my dinner salad I added a little black bean and corn salsa I had leftover to give it some extra flavor. I packed a peach and a few pretzels with my lunch and put it in the fridge. 


Leftover Pancakes and Fruit



I cut up the bananas and strawberries into a plastic container put the pancakes in a plastic bag on top of the fruit to keep them fresh. Into the fridge and just threw the pancake in the microwave for 15 seconds in the morning and topped with the cool whip! Quick and easy!

Red White and Blue Pancakes


Hope everyone had a great 4th! This breakfast definitely put me in the spirit!
Red White and Blue Pancakes
The pancakes were made with Bisquick Heart Healthy Mix, egg substitute, fat free half and half (cause we didn't have milk) and frozen blueberries (thawed and drained). Then added a bunch of blue food coloring for the fun! Sliced some strawberries and bananas and added fat free Cool Whip!


Delicious, easy, and fun!

Weekend Breakfasts

Can you believe it's July?? Crazy! Anyway... Yesterday was an all day beach drinking day, so after my morning run I needed something filling but light enough so food baby would not be present at the beach. So, low and behold:
Half Banana Waffle topped with Bananas and Blueberries and Scrambled Egg Whites on Canadian Bacon and Avocado topped with Tomatoes and Feta!
My mom uses the Bisquick Heart Healthy mix to make batches of waffles and pancakes and then freezes them for later. This makes it really easy to heat them up quickly and add your favorite toppings.
Sunday is my favorite day to go out to breakfast/brunch. This morning: Citrus
Fresh Watermelon Juice Mimosa and "Beach Benedict"



English muffin with avocado, tomato, sauteed spinach with a poached egg and hollandaise sauce. Delicious!
