Weekday Meals

I work early in the morning so it's easiest for me to prepare everything the night before so I can get up in the morning, run, shower and go.
This week was a little off because of the holiday but here are a few meals:


Quick Chicken and Spinach Salad for Lunch and Dinner

Normally, I come straight home from work and pull out a million things from the fridge and go from there. I take out a plastic container to pack lunch and a plate for dinner. Then depending on what I'm in the mood for I'll just start adding ingredients to both. This particular time I felt like eating the same thing for both meals but I usually try to switch up ingredients for variety... 
Here I used spinach, avocado, mushrooms, carrots and added some leftover grilled chicken. Topped with a little black pepper, olive oil and lemon juice (notice the dressing container attached to the plastic lid, best invention ever!). On my dinner salad I added a little black bean and corn salsa I had leftover to give it some extra flavor. I packed a peach and a few pretzels with my lunch and put it in the fridge. 


Leftover Pancakes and Fruit



I cut up the bananas and strawberries into a plastic container put the pancakes in a plastic bag on top of the fruit to keep them fresh. Into the fridge and just threw the pancake in the microwave for 15 seconds in the morning and topped with the cool whip! Quick and easy!
