Prepacked Breakfasts

Had to go back to work this week but I'm determined to keep up with this blog. My summer hours are a little later than the school year so I have a little more time to dedicate to making breakfast before work. 


So.. instead of my usual smoothies and yogurt meals to go, I started prepacking meals so they are ready, or almost ready to eat in the morning.
This is how I prepacked the meal the night before: Cut up the mango, strawberries, avocado and tomatoes. In the morning I just toasted a piece of bread, added an over-easy egg, and fat free cool whip to the fruit, of course.

The pancakes and veggie sausage were frozen but I put them in fridge the night before and heated them up in the morning and added the toppings. I put the cantaloupe in a bag to keep it fresh.
Wrapping a banana in plastic wrap helps the banana from turning brown in the fridge.
For the asparagus, I seasoned it in aluminum foil the night before and just threw it in the toaster oven in the morning with the english muffin. Added canadian bacon and an egg.

A Day to Indulge

I have to remind myself that sometimes it's okay to indulge. I've been wanting to try The Broken Egg for some time now.. So, why not on the last day of vacation? 
Got the early bird special, "The Kempsville" and a Peach Mimosa.
I hardly made a dent in those pancakes, they were so big. It was delicious and food baby was out and about!

Juicy Cantaloupe and Stuffed French Toast

A sweet friend shared this awesome website/blog with me of a photographer that photographs delicious looking food/food culture and I wanted to share it with you all as well.. So check it out: 


Cantaloupe is a great breakfast fruit because it tastes awesome with salty, savory breakfast foods. This morning, I made a cantaloupe avocado salad and topped it with an over-easy egg, the salty and sweet flavors together were pretty delicious.
I think I've said before.. I love french toast! I wanted to try something a little different this morning. French Toast stuffed with bananas and honey.
These are the ingredients I used for the french toast, minus the peanut butter, because I changed my mind right after I took this picture and opted for honey instead!

The Bobotas Diner

Seriously, I've started taking personal orders for breakfast at my house.


Breakfast burrito with scrambled egg whites, asparagus, ham and cheddar cheese for Mom.
To get good flavor with the asparagus, I chopped it up and sauteed it with a tiny bit of olive oil, garlic, and chopped onion. 
Steph wanted avocado, tomato and egg. So, that's what she got. In a tortilla, with cilantro lime sour cream and cheddar cheese.
And.. she got called into work so that was the only photo I got. 

Lastly, breakfast for myself.
Baked Asparagus on Jasmine rice, Egg over-easy with tomato and avocado, and Grapes.

Black Bean and Corn Salsa and Homemade Margaritas

Sometimes I think I should have been born a Mexican. I love Mexican food! There was left over corn on the cob in the fridge and some extra black beans so... Black Bean and Corn Salsa!

The Ninja is awesome for chopping ingredients in seconds, but it can easily be done with a sharp knife. I put red onion, garlic, and fresh cilantro into the Ninja then mixed it in with the corn and beans. Added the tomato and lastly the avocado. Finally, a drizzle of olive oil, dash of sea salt, and a little fresh squeezed lime juice! 

Now all you need are some chips and.. a margarita!
 I use frozen limeade concentrate for the base of my margs. I mix the limeade with water like it explains on the packaging. Then add in a little orange juice, a decent amount of triple sec, and a generous amount of tequila. Mix it all together and pour it on ice, in a glass garnished with lime and oranges if you have them, and salt, which I totally forgot for this margarita.

Ballpark Dog and a Breakfast Feast

I love baseball games.. I especially love a good ballpark hot dog and a cold beer. It's been a couple of months since I've been to a game, so I was particularly stoked on last night's Tide's game. The Longwood Alumni Association held a picnic at the park before the game, which included your usual picnic food and, of course, delicious hot dogs!

Now... on to the most important meal of the day..... Breakfast!


Well, I was rudely awaken around 5:30 this morning by an obnoxious cat, Stroodle, crying outside of my bedroom door. This was right about the same time Stephanie came home to get ready for work, so, I made her breakfast. 


A breakfast burrito with hashbrowns, turkey sausage, scrambled egg whites, spinach, and feta wrapped in a flour tortilla. It was a monster.




Then after my run, I cooked breakfast for Justin and myself. 


French toast topped with fruit, light syrup, and fat free cool whip. An over-easy egg on ham wrapped asparagus. 



The french toast is simple, but cook it first and place it in the oven to keep it warm. I used liquid egg whites and a little bit of fat free half and half, and cinnamon of course. Then soaked the bread in the mixture and threw it in the skillet at medium heat. I've been craving french toast for a while now, and you can top it with anything you want!


I wrapped regular deli ham around the asparagus and stuck a toothpick through the middle to hold it in place. Then placed them on aluminum foil and seasoned them with olive oil, lemon juice, pepper, sea salt, and rosemary and baked them in the toaster oven. When they were almost done, I sprinkled them with a little parmesan cheese. Easy! Yummy!

Savory and Sweet

It's no secret that I have a sweet tooth. So naturally, I always crave something sweet for breakfast, but I also love a savory meal, and sometimes I have a hard time deciding between the two. So why not have both!


This morning I really wanted something sweet. Normally, I just add fruit on the side to get my sweet fix, but today I wanted something a little different.


Egg over-easy with tomatoes and avocado and strawberry banana toast with strawberry yogurt spread.


I wanted to use cream cheese for the spread, but didn't have any, so, I just mixed a little fat free greek vanilla yogurt and strawberry jelly together, which I had doubts about since greek yogurt is a little more sour, but it was surprisingly very sweet and very yummy, however, not as thick as it would have been with cream cheese.
By the way, it is miserably hot today, on this first day of summer. Running this morning was rough!

Scrambled Egg... whites and a Kiwi!

Good Morning! 


I realized I forgot to mention a small detail about myself... I run. Every morning, unless of course, it is raining, like it is this morning. I'm not a fan. So, when it rains, I pull out the Bosu Ball. I'm a big fan because I can work out all of the areas I want at the same time. But I still hope this rain clears soon so I can get my run in today.


Anyway, on to the good stuff... Breakfast!


Scrambled egg whites with spinach and tomatoes on toast, topped with lemon oregano feta. Bananas and blueberries topped with cinnamon and fat free cool whip.

Loaded a piece of toast with spinach and sliced tomatoes. For the eggs, I used one serving of liquid egg whites with a little bit of half and half for fluff. And topped it with a little feta that I pre-mixed with a splash of lemon juice and oregano, so good and easy!


After breakfast, I found a kiwi in the fridge and figured I'd use it for lunch... so I did. I found this recipe from Our Life in Food for an Avocado, Kiwi and Strawberry salad. I did a smaller, quick version and added some leftover grilled chicken. 


Then I plated it to take this photo, but had to throw it in a plastic container and eat it on the go...

Dinner for Dad


And here goes post number 2... two in a day, is that unheard of?


My Dad does not necessarily love avocado, so it makes it difficult for me to cook for him, considering, that's pretty much included in everything I eat. But, Dad loves Stuffed Green Peppers, so since I have the time to cook him dinner this week, that's what he got!


I used this recipe from BHG. It took for-freaking-ever to cook, but it was easy and delicious! 



And for dessert... Strawberry Shortcake!



I cut a slice of store-bought Angel Food Cake. And I used fresh strawberries, cut 'em up and added a little bit of brown sugar to make them juicy! Add fat free cool whip and a whole strawberry to make it look fancy... and that is that! 

Overall, Dad was pleased. (I didn't tell him that the meal was healthy...)

First Blog!

So here goes nothing.. 


My first blog! Whoo! I'm not much for introductions so here's an abbreviated one:


I'm Alexa. I love to cook, for the most part. I'm pretty terrible at baking. I love avocado and I'm always, always down for a good margarita!




So, I'm on vacation this week, which is the reason I have time to start my blog. I love making breakfast, but I usually only get to cook it on the weekends since I eat on the go during the work week. As work starts again I'm going to try to update as much as possible!


And without further adieu... this morning's breakfast:


One egg over easy, topped with avocado and tomatoes. And a blueberry pancake (that Mom made this weekend) topped with MORE frozen blueberries, syrup, and fat free cool whip! Yumm!


When my sister got home this morning, she wanted breakfast, of course. So, I made her a "Greek" omelet, with egg beaters and a little fat free half and half for fluff. I loaded it with avocado, duh, tomatoes, spinach, pepper and oregano, and.... feta! 


She ate most of it before I had a chance to take a picture.




{BTW. I'm not a fan of how these pictures look, but I guess that's what I should expect from a phone. I'll have to work on that. I definitely have some editing to do.}
