Black Bean and Corn Salsa and Homemade Margaritas

Sometimes I think I should have been born a Mexican. I love Mexican food! There was left over corn on the cob in the fridge and some extra black beans so... Black Bean and Corn Salsa!

The Ninja is awesome for chopping ingredients in seconds, but it can easily be done with a sharp knife. I put red onion, garlic, and fresh cilantro into the Ninja then mixed it in with the corn and beans. Added the tomato and lastly the avocado. Finally, a drizzle of olive oil, dash of sea salt, and a little fresh squeezed lime juice! 

Now all you need are some chips and.. a margarita!
 I use frozen limeade concentrate for the base of my margs. I mix the limeade with water like it explains on the packaging. Then add in a little orange juice, a decent amount of triple sec, and a generous amount of tequila. Mix it all together and pour it on ice, in a glass garnished with lime and oranges if you have them, and salt, which I totally forgot for this margarita.
