Now... on to the most important meal of the day..... Breakfast!
Well, I was rudely awaken around 5:30 this morning by an obnoxious cat, Stroodle, crying outside of my bedroom door. This was right about the same time Stephanie came home to get ready for work, so, I made her breakfast.
A breakfast burrito with hashbrowns, turkey sausage, scrambled egg whites, spinach, and feta wrapped in a flour tortilla. It was a monster.
Then after my run, I cooked breakfast for Justin and myself.
French toast topped with fruit, light syrup, and fat free cool whip. An over-easy egg on ham wrapped asparagus.
The french toast is simple, but cook it first and place it in the oven to keep it warm. I used liquid egg whites and a little bit of fat free half and half, and cinnamon of course. Then soaked the bread in the mixture and threw it in the skillet at medium heat. I've been craving french toast for a while now, and you can top it with anything you want!
I wrapped regular deli ham around the asparagus and stuck a toothpick through the middle to hold it in place. Then placed them on aluminum foil and seasoned them with olive oil, lemon juice, pepper, sea salt, and rosemary and baked them in the toaster oven. When they were almost done, I sprinkled them with a little parmesan cheese. Easy! Yummy!
